The titular restaurant began in New York City in 2015, with the Tokyo flagship location opening two years later in 2017. This first location is in a retired speakeasy that was active during the prohibition days, and maintains a mystique as to what is behind the kitchen doors.
Yakiniku 37west NY has patented the “owners meat system”, a method of selecting, freeze drying, aging, and scrutinizing the atmospheric conditions of the meats for optimal flavor. It is an immensely involved process that on average takes ninety days for the meat to see a plate. Diners can select a premium slab of beef to be prepared to their specifications.
