Established in 1960, Kyodaizushi is a high-class restaurant that serves sushi courses. The second-generation owner is very sensitive to the ingredients, the timing of serving, and the design of the restaurant. The restaurant was awarded a star in the prestigious Michelin Guide in 2020.
At Kyodaizushi, customers can see how the seafood is cut and seasoned to suit each type of sushi. The chef believes that the closeness and relationship between the sender and receiver of food are unique to a sushi restaurant.
Namban prawns are recommended; caught off the coast of Sado Island and cooked in a combination of bonito and kelp broth at low temperatures. The prawns are cooked to a fluffy texture and have a rich flavor. The refreshing sansho pepper adds a nice accent.
