Kukiriryori Happo was awarded two Michelin stars in the MICHELIN GUIDE OKAYAMA 2021. Here, fresh and flavorful local ingredients from Okayama are adopted, along with carefully selected seasonal ingredients from all over Japan, to prepare dishes that can only be enjoyed here and now.
The soup stock is made by using plenty of kelp imported from Rishiri Island in Hokkaido and boiling it over five hours at low heat. Freshly-ground dried bonito flakes are added to the first soup to make a sweet and clear soup. For simmered dishes, they use chicken, dried shiitake mushrooms, and other ingredients to bring out the best of the ingredients.
The restaurant also offers a wide selection of local sake, as well as those that are hard to find in Okayama. Among them, they selected sake from breweries that are popular with customers.
