Kitashinchi Sushi Shiorian Yamashiro
The Kitashinchi branch of this Michelin-starred Edomae sushi restaurant brings its pedigree of excellence to Osaka.
Restaurant Details
To get a Michelin Star once is usually enough to cement a restaurant’s legacy. But famed Ginza restaurant Shiorian Yamashiro, discontent with achieving this feat only once in 2018, repeated it by earning another star in 2019, and again in 2020.
Hoping to replicate this success in other parts of Japan, Shiorian Yamashiro has now opened an Osaka outlet in the city’s nightlife district of Kitashinchi. A minute’s walk from Kitashinchi Station, the Kitashinchi outlet is likewise founded on the same principles of relentless dedication to the craft of Edomae sushi.
To the chefs at Shiorian Yamashiro, Edomae sushi isn’t just a meal; it is an experience for all of the senses. Before the sushi even reaches the guest’s mouth, it must be aromatic, enticing to the eye, and served with pride.
Fine seasonal vegetables and seafood are used , and in accordance with the Edomae school, the fish is specially aged to maximize the umami and depth of flavor. Each piece of sushi is delicately crafted with time-honored technique, and is made to not just taste good, but also look immaculate. According to the chefs at Shiorian Yamashiro, every nigiri is made with the customer in mind: the thought of a satisfied smile on a diner’s face is what motivates them.
Whether guests choose private seating for their meal or seats at the counter for a more personal experience, Shiorian Yamashiro perfectly embodies the refined atmosphere of a high-class Edomae sushi establishment.
