Many restaurants in Japan have long queues for bookings, but few are as competitive as Jinsei in Osaka. This sushi restaurant’s six seats are among the most coveted in the world.


The chef-owner was once a promising baseball catcher, and now uses his hands to mold perfect beds of rice — rubbed with white vinegar for a sharp, umami-unlocking kick — upon which to perch some of the best seasonal fish Osaka has to offer.


The rustic, wooden exterior of this small Shinsaibashi shop is deceiving. Though it might look like any other small eatery in town, this is undoubtedly one of the top sushi experiences going.
