Katamachi Kawaguchi finds home in a quiet corner lot along Tosabori-dori, close to Osaka Castle. At night, the street is nearly deserted, shrouded in darkness, and the restaurant’s unassuming exterior, easily missed if not for the small sign bearing its name, further blends it into the quiet surroundings.
But behind its facade lies a dining experience with immense potential. Opened in 2023, Katamachi Kawaguchi is the new incarnation of chef Hiroshi Kawaguchi’s former venue, which he has revitalized with a fresh name and a thoughtful redesign. Katamachi Kawaguchi’s dining space feels almost sacred, grounded in traditional Japanese architecture. The decor is subtle, with just a single ikebana arrangement and a framed picture lending a touch of refinement. Even the eight seats lining the counter are generously spaced, providing distance between diners while creating a closer connection to the chef.
For his omakase-style traditional Japanese menu, Kawaguchi handles both service and cooking. There are no flashy ingredients or theatrics; instead, he aims to create a meal that no one will tire of, and much effort goes into preparation behind the scenes. For instance, the broth, made from Rishiri kelp and bonito, boasts a light and subtly mild flavor. This dish is topped with clams and broad bean tofu. A homemade ishiri (fish sauce), crafted from squid and sardines, lends a unique umami depth to the broth. Additionally, sakura-masu, or cherry salmon, is marinated in yuan-ji sauce before being char-grilled and paired with asparagus and fermented radish.
