Jfree embodies a modern approach to fine dining — one informed by schools of gastronomy that defy genre standards. The Michelin-selected restaurant founded in 2023 by Miyazaki-born chef Jinnai Tsubasa.
From the beginning, Jinnai’s career has been closely linked to the global standards of Michelin-recognized dining. His first two positions were at the world-famous Floriledge and Quintessence in Tokyo.
Jfree marks his departure from the traditional school of thought surrounding French cuisine. The “free” of Jfree is reflected in the way Jinnai reworks French flavors for the Japanese palette, emphasizing a sense of familiarity. He selects Miyazaki-grown ingredients that honor his birthplace, many of which are sourced from his personally contracted farms.
With its seasonally rotating omakase course menu, even repeat guests have something new to look forward to. One of Jfree’s signature courses features delicate anago (freshwater eels) with Kujo leek and refreshing sauce. Though many of Jfree’s dishes are developed to suit a Japanese palate, diners will find that the use of sauces firmly roots each course in French gastronomy.
The interior design makes use of rich wood and monotones, reflecting key elements of Japanese aesthetic philosophy. From kitchen-facing counter seats, guests can watch Chef Jinnai prepare each element with care. Over 100 varieties of French wines are available by the glass or bottle.
