Hatsune Sushi is one of the best sushi restaurants in Niigata and was awarded one star by the MICHELIN GUIDE NIIGATA 2020. It is said to be one of the best restaurants in the prefecture, so you can see why it is difficult to make a reservation.
Nanban shrimp sashimi is recommended. This is a so-called sweet shrimp, but in Niigata, it is called "nanban shrimp" because its color and shape resemble red pepper (“nanban”).
At Hatsune Sushi, they only serve sake from Niigata. The sake is fruity yet crisp, easy to drink, and goes well with the snacks and dishes. Kirinzan's Namekara is served in a 300 ml bottle. This is a really great wine with a crisp mouthfeel.
