Located in Fukuoka, Da Michele is a restaurant that provides Italian cuisine such as pizza.
The kiln used in the store was built locally and brought in by boat from Italy. The temperature and baking process is completely different from those of ordinary kilns.
The dough used for the pizza is of course handmade. The secret to its deliciousness is that they use the same flour as the main store in Naples, and water of the same hardness as in Italy.
Da Michele's mozzarella & tomatoes are packed fresh in Naples and delivered fresh from Italy with Fiordilatte (fresh cheese made from whole cow's milk). The tomatoes are sweet with little acidity, and thanks to the successive generations of pizzaiolo (pizza chefs), their tomato sauce is so delicious. Both the cheese and the tomatoes can only be found at Da Michele's in Japan.
