Crafting miso paste is a great way to connect with traditional Japanese culture hands-on. Learn this art directly from the owner of a renowned miso brewery in Kyoto that manufactures products used in world-class restaurants during this miso-making workshop and brewery tour.
You’ll step inside a miso shop that has been in business honing the craft of miso-making since 1917 and enjoy a guided tour of this historic brewery. While most modern miso breweries rely on machines and other equipment, wooden barrels used for centuries continue to be used here. They are said to house unique and beneficial microorganisms that deeply influence the flavor and aroma of miso paste.
You’ll also learn to craft miso paste yourself, guided by the brewery owner, who will teach you the techniques and processes of making and brewing this paste. By the end of the workshop, you’ll take home 1 kg of handmade miso to ferment at home. During fermentation, the miso paste will develop a unique aroma, color and umami-rich taste.

- Please participate in comfortable clothes and shoes that you don’t mind getting dirty
- The course will be held outdoors. During the summertime, guests are asked to bring salty water to avoid heatstroke.
- Please do not eat natto for 2 days before the experience date.
