清真寿喜烧餐厅 Diyafa 的诞生源于一次谈话。当时，厨师长大川秀树正在与一位朋友聊天，话题转到他的朋友带穆斯林游客游览日本，以及即使在东京这样的大都市也很难找到清真食品。直到这时，他才意识到日本食品在多大程度上使用了被视为禁忌的配料，如清酒和米林。
"他回忆说："我觉得这太可惜了，人们千里迢迢来到日本，却无法体验日本文化的方方面面。
大泽厨师对此深感不安，于是他关闭了自己经营的传统日本餐厅，并将让穆斯林游客也能品尝到日本美食作为自己的使命。他认为，寿司和烤肉是最常见的清真替代品，因此他决定尝试探索日本料理的另一个完全不同的方面，一个同样深深扎根于日本饮食文化的方面：寿喜烧。
别搞错了：大佐川厨师决心为他的顾客提供最好的寿喜烧体验--清真并不意味着牺牲寿喜烧固有的美味。
首先，餐厅使用的都是知床（Shiretoko）和牛，这是一个相对较新的品牌，因其细腻、入口即化的大理石纹理而在和牛界掀起波澜。所有知床和牛都是用北海道特有的谷物喂养，并用北海道东北部网走的纯净 Ginrei-sui 泉水浇灌。
牧场主对每头知床牛进行全年监控，以确保它们始终处于最佳状态。它们必须经过至少 14 个月的育肥，肉质达到 3 级及以上，才有资格出售。
而蔬菜则离家更近一些，直接从大泽主厨的一位好友那里采购，这位好友在茨城县亚美市经营着一家农场。
用餐结束时，大泽主厨还会为客人送上新泡的抹茶，让用餐体验更加完美，真正体现了 "diyafa"（热情好客）的精神。
