Okayama is a seaside city, and capital of the western prefecture of the same name, famous for its black walled “Crow Castle.” In the city lives a sushi chef who is an expert in aging fish in the historic Tokyo style to allow the umami flavors of the flesh to develop fully.


Before this Edomae sushi is served, guests dine on a generous range of starters including shrimp in steamed caster and grilled salmon. Around twelve pieces of nigiri follow this, each bursting with flavor. Expect classic styles such as saltwater eel and tuna. Here, history and tradition take precedence over innovation, an approach which is justified with every bite.
