Amid the competitive sea of sushi restaurants within Tokyo’s gourmet mecca, Ginza Shiorian Yamashiro stands out as a distinguished Edomae gem.


The restaurant, helmed by a Kyoto-trained chef, has sustained a winning streak of one Michelin star each year from 2018 to 2020. Fast forward a few years later, and you will find exquisite traditional sushi crafted with the same high quality retained on its opening day.


Tucked in a narrow backstreet of the upscale Ginza strip, diners will notice the few counter-seats wrapped around an open kitchen. The interior blends modern opulence with traditional Japanese style; here, sushi is meant to be enjoyed leisurely, without any rush.


Founded on the passion to marry Kyoto’s kaiseki and Tokyo’s Edomae cuisine, the omakase is hyper-seasonal. The house-blend dashi stock which underpins it all is fantastic, as is the beautiful hassun platter. In spring, bamboo shoots and wild plants steal the spotlight, while autumn brings the richness of matsutake mushrooms and red sea urchins. Nigiri sushi, topped with high-quality fish like fatty tuna, kuruma prawn and grouper, showcases the chef's excellent knife and hand skills.
