Even though it’s a little out of the way from the city center, Muginoyoake has gotten enough traction to have visitors making a dedicated trip for it. The owner's passion for ramen began in childhood, inspired by his grandmother’s ramen cooking. From there, he started a ramen club, apprenticed part-time at a popular ramen shop in Kyoto and worked at a flour-milling company to become an expert in wheat.
His no-frills, Bib Gourmand ramen joint offers several types of noodles and tsukemen (Japanese dipping noodles). The foolproof formula is to order the innovative scallop and Japanese pepper ramen, where the broth is a symphony of peppery spice and umami richness. Crafting them from rare wheat, his noodles are flat and straight.
For a second visit, order the beef shoyu ramen, which carries a mellower flavor and sweeter profile than the Kyushu soy sauce.
