Pioneering a new age of Japanese cuisine, La BOMBANCE is far from a traditional kaiseki restaurant. The dishes in the only course menu offered — which switches up every month — are not limited to only the Japanese genre. Rather, they're influenced by various foreign cuisines to create a perfectly-curated, creatively-approached meal.
Chef-owner Makoto Okamoto intends to extract the essence of Japanese cuisine by using seasonal ingredients sourced locally in Japan. He consciously preserves the traditional aspect of Japanese food while still developing it to great heights. Dishes like egg custard and vegetables steamed in a cup of foie gras and shark fin are inspired by Chinese cuisine, presented with flavors that are tailored to the local palate.
A nice little touch at the end of the meal, guests of La BOMBANCE are also given a jar of their house-recipe spicy sauce as a parting souvenir. The warm hospitality on top of a harmonious dining experience separates this restaurant from the rest.
