Located unassumingly in a residential district of Okayama City, Hisada seems a world away from the typical downtown sushi restaurants. However, its reputation stretches far beyond this sleepy suburb, and its name is known among sushi connoisseurs all over Japan.
The relaxed local atmosphere is complemented by the genuine hospitality of the chef-owner, who opens his doors from Friday to Sunday to provide dishes that use some of the best locally available produce.
The only choice available is his set menu, which features common ingredients such as scallop and octopus, as well as less conventional offerings like pickled mozzarella and jellyfish. The vast majority of the fish served here is caught from the Seto Inland Sea, ensuring the highest levels of freshness and traceability.
