One has mastered the art of sushi when they have found the perfect balance between fresh seafood and shari, the sushi rice. Chef Hiroyuki Sato has perfected that craft and has now opened his own sushi establishment that is both sophisticated and casual, right in the center of Ginza.


Presenting his type of cookery as luxurious home cooking, what makes chef Sato's restaurant stand out is the high-quality ingredients sourced from the best producers all around the country, prepared professionally by the hands of a master chef. Sato's ability to fully utilize the potential of every ingredient is highly lauded.


Chef Sato introduces vegetable dishes as palate cleansers in between the sushi ones to create perfectly timed intervals between the courses. This is so each ingredient can be tasted in its full, natural essence rather than being overpowered by the previous one.
