This rapid success can be attributed to the clear-sighted philosophy and perfect execution of chef-owner Takeshi Kubo.
He values substance over style, favoring perfect ingredients and solid cooking techniques over ostentatious presentation. To be able to present the best of Japan’s produce to his diners, Takeshi has cultivated strong relationships with several high-quality producers around the country. Through these links, he can procure prime ingredients such as chrysanthemum, wild soft-shell turtle, and bamboo shoots.
The results speak for themselves, with food that justifies the quiet confidence of the chef. He is famed for his grilling prowess, so expect some perfectly prepared meat and fish to feature on the set menu (the exact dishes change with the seasons). Each course is presented on pieces of the owner’s antique serving-ware collection, gathered over many years.
