To stand out from the crowd of kaiseki restaurants in Ginza, this restaurant decided to specialize in all things Kochi — a city on the island of Shikoku. Through both set-course menus and a la carte, Ginza Ibuki carefully selects the best seafood and other ingredients fresh from the season to create dishes which showcase the great seafood dishes of this coastal town.
While private rooms are available, the counter seat at this restaurant gives you a full view of the open kitchen. Witness the preparation right before your very eyes as the chef and staff meticulously execute their craft.
The signature dish is the bonito tataki. To make it, bonito is broiled for roughly one minute over a straw-lit fire that infuses it with an earthy, smoky flavor. Dash a bit of salt over it and eat it in one bite.
Other seafood from Kochi to look out for is the skipjack tuna, mackerel, baby eel, pike eel, snapper, round herring, and alfonsino. The lunch sets are spectacular as well, as each set comes with starters of deep-fried tofu and stewed dishes, mains, rice, miso soup, Japanese pickles, and Sake Kasu ice cream for dessert.
