Chicken doesn’t come any fresher than at Toricho, where the poultry is slaughtered fresh every morning to ensure that it’s safe to be eaten raw that evening. And that is just what is done here!
This is one of the best places to try out the Japanese practice of eating chicken completely uncooked. Various different styles are offered, including a raw meatball with wasabi and onion, raw heart, and raw gizzard.
Don't fear if you’re turned off by the idea of raw chicken — there are also conventional offerings like chicken breast katsu, chicken liver hot pot, and chicken nanban. Just be sure to mention this to the staff when you’re seated, lest you find yourself biting down on pink rare poultry. Who knows, you might even discover a new favorite dish.
