這就是 Shibuya Sushi Lab 壽司背後的驅動理念。主廚田原龍一曾在江戶前壽司店受訓 26 年,因此很少有廚師能比他更熟悉壽司的形式。當然,他的員工也同樣需要非常熟悉壽司製作的基本要素。
不過,Shibuya Sushi Lab 的名字本身就蘊含着嘗試的意味,因此菜單上的大部分產品都是近年來迅速流行起來的「津本壽司」。所謂「津本壽司」,並不是指製作壽司的特定方法,而是指一種特殊的放血工藝,這種工藝能使魚肉更加鮮美可口。根據魚的種類,Sushi Lab 的魚要經過長達 40 天的熟成,因此每塊魚的味道都特別濃郁。
