既有日本野豬肉的粗獷風味，又沒有野味的腥味和後味，還有日本家豬肉入口即化的肥美口感。
這些特質只有和歌山縣的伊武比頓豬肉才具備，而伊武比頓豬肉正是壽司櫛孔春日本町使用的主要肉類。Ibu Biton 豬隻在海濱小鎮 Susami 飼養，用混合了梅子醋提取物的穀物餵養，據說這賦予了豬肉特有的甜味。
