Opening its doors in 2024, the road up for Numata Sou has been smooth so far. Mirroring the success of its original counterpart, the venue landed its first Michelin feature in less than a year. The restaurant is led by former apprentices of the legendary Numata Kazuya, who is known as the “king of Osaka tempura” and creator of the acclaimed Tenboshi and self-titled Numata.
Rather than taking a one-man approach, Numata Kazuya entrusted his legacy to two of his most trusted chefs: Takahiro Yamagata, who oversees the main counter, and Kaneko Akimoto, who leads the private dining service. The two chefs are the inspiration behind the name "Sou," which means "pair" or "two" in Japanese, symbolizing their combined efforts in bringing Numata Kazuya's tempura legacy to life.
The menu alternates between vegetable and seafood courses, with dynamic pairings like Kumamoto ginkgo nuts with prawns, white okra with sweetfish, and asparagus with conger eel. The tempura batter’s thickness and style are carefully adjusted for each ingredient, maximizing flavor and texture. For instance, the tiger prawn is artfully prepared by frying its head and body separately.
Diners can enjoy an equally exceptional experience at either the main counter, where live cooking takes center stage, or the private dining area for a more intimate, family-friendly setting. The restaurant caters to both adults and children, making it ideal for special occasions or family meals.
