For over 1000 years, wagashi — traditional Japanese sweets — have captivated the eyes and taste buds of people around the world. These delicate confectionaries add color to every season with elegant sweetness and charming patterns. Wagashi makers draw inspiration from nature and even art forms like poetry to create simple yet whimsical designs.
In this experience, you’ll learn how to make nerikiri, one of the most delicate and ornate types of wagashi. A soft and chewy rice cake with sweet white bean paste filling, nerikiri has a unique texture and strikes just the right balance of flavors without being overly sweet. The dough is soft enough to mold into beautiful designs, which your instructor will help you achieve.
Your host, Yuki, is a professional cooking instructor who has appeared on Japanese TV many times. She studied the principles of washoku (traditional Japanese cuisine) from a professional chef who used to cook for celebrities and the Japanese imperial family. Yuki loves to share her knowledge with everyone, and her expertise and enthusiasm make this experience one you don’t want to miss out on during your time in Sapporo.

Shape 4 nerikiri wagashi pieces following the host’s demonstration (the dough will be premade and pre-colored, and the recipe for the dough is available upon request).
