All of the ingredients used at Yutaka Sushi are directly harvested from the mountains and caught from the oceans of Japan. Proud of its exclusive use of local ingredients, this sushi restaurant applies various methods to extract the best flavors from them. Seafood ingredients are aged, and shari is made using Sasanishiki rice and seasoned with organic salt from Sagami Bay, and aged red vinegar from the Edo period.
