Set against the jet-black walls and clean wood tones, this decoration frames Sushi Sho’s talented chefs. The restaurant’s sense of refinement is nearly as impressive as the menu, an omakase selection developed with intention right down to the rice.
One would expect no less from a restaurant run by Chef Jun Yamano, a sushi kappo expert with a long history of collaboration with the Kinnotake Group, one of Hakone’s foremost luxury hospitality groups.
Under Chef Yamano’s direction, guests can expect to have a different experience every time they set foot in Sushi Sho, with menu content changing regularly to showcase the best ingredients of the season. From seasonal fish to miso soup ingredients and even preparation styles, each item is specially chosen to fit perfectly into the surrounding environment. A variety of sake and domestic shochu are also available to complement the menu.
