His easygoing demeanor and attentive customer service makes already excellent sushi all the more delicious.
Chef Take’s restaurant only begins to boil rice when its customers come in, using traditional Edomae techniques to form oblong mounds of pearls lacquered with red vinegar. From sashimi to nigiri, this sushi-ya takes its time to decoratively slice fish into a feast for the eyes and palate.
