Plenty of kaiseki chefs will travel to the market every day to collect their ingredients, but how many go to the lengths of collecting their own spring water? That’s exactly what the chef at Yoshino in north Osaka does.
This Michelin-starred traditional restaurant has gained widespread acclaim for its authentic renditions of classic seasonal and regional dishes. The chef may have mastered Kansai’s cuisine, but he himself is from Tokushima Prefecture. Expect some interesting little touches to be added to his dishes using unique ingredients from his home.
