Nestled in the heart of the historic Gion district, this restaurant specializes in providing the most outstanding cuts of Japanese beef for meat lovers with sophisticated tastes.
The chef-owner was inspired to open a restaurant after tasting an exquisite cut of fresh beef provided by a friend who worked in the supply industry. His philosophy is to provide that same level of freshness and flavor in every one of his culinary inventions.
The course-only menu changes every month to match the cycles of the seasons, ensuring that it’s always the freshest meat and vegetables which find their way onto the plates here. The beef used cycles between some of Japan’s highest-grade types — including the Omi, Mita, Kobe and Matsuzaka varieties — and always remains of the highest quality.
The food itself is a combination of tradition and creativity. Expect inventive dishes such as vegetables fried in beef tallow, beef tongue marinated with kelp, and soups made with unusual combinations of stock and meat, featured alongside traditional favorites such as shabu shabu and steak.
For the main steak, diners are given the option to choose from five different cuts of beef according to their preference.
