Tellingly, A5 kuroge wagyu is the name of the game at this sleek venue. The restaurant enjoys the great advantage of being a direct wholesaler. Cows are purchased a few at a time, so the venue is able to offer rare cuts of beef at reasonable prices. Not that the menu sticks to one thing, either.


Masu Roppongi excels in twisting and delivering playful renditions of wagyu, like the wagyu “sushi” crowned in salmon roe, sea urchin and caviar. On the frying station, juicy mushroom gets buttered up and stir-fried with wagyu stock. The typical closing dish? A rich, creamy soup built upon beef bone that has been simmered for over 10 hours.


Diners can complement their meal with beer on tap, champagne, sake or traditional umeshu (plum wine) and shochu.
