Just a minute’s walk from Kawasaki Station, the Kawasaki outlet differentiates itself from other Yokota restaurants under the umbrella by diversifying its product offerings: rather than serving just tempura like the original restaurant, the Kawasaki branch serves both sushi and tempura. Yokota is famously known for being especially particular about the purity and composition of its tempura oil and batter, as well as the oil's temperature — but is even more particular about the time in which the tempura is immersed in the hot oil, right down to the second, to ensure it’s cooked to the exact degree of doneness.
It goes without saying that the restaurant is similarly particular about the standards in which its sushi is made. Signature items like the sea urchin nigiri and fatty bluefin tuna nigiri are made with the freshest seafood purchased daily from local markets.
