The restaurant is committed to using fresh whitebait in their meals. All the whitebait served at the restaurant are caught on the same day and are sourced locally from the Kamakura, Katase, and Shonan fishery ports.
There are multiple seafood rice bowl options available at Tobiccho with each of them featuring whitebait as the center ingredient. The most popular dish is the “4 Colors Kamaage Whitebait Bowl” which includes minced fatty tuna, caviar, pickled sakura shrimp, seaweed, and egg - with whitebait it makes a very colorful feast for the eyes!
In addition to their bowls, Tobiccho has various side dishes that feature whitebait, such as whitebait bread, whitebait omelet, whitebait tofu, and whitebait seaweed.
