There is so much to talk about FARM TO TABLE KANBE. Blurring the line between producer and consumer, as its name suggests, the restaurant’s 18-meter-long dining counter comes alive with more than just stunning plating. The narrow, elongated dining space is intentionally pared back, with smooth, silk-like concrete walls extending to the floor, to allow the focus to remain entirely on what’s on the table.
Or rather, what’s projected onto it.
As diners enjoy a French-inspired multicourse degustation, projections of Kobe’s natural landscape bring the story of these ingredients to life. The menu features day-fresh, pesticide-free vegetables sourced from the local agricultural association. It’s a powerful reminder of the land and people that sustain the meal. The icy waters flowing from the Rokko Mountains, the warmth of the Seto Inland Sea and the abundant marine products are brought together in a French-inspired kappo style.
The appetizer platter draws inspiration from Western, Japanese, and Chinese cuisines, while dishes like potage and hors d’oeuvres lead into the star of the meal: Kobe beef. The same fresh produce featured in the starters is incorporated into the dessert in a full-circle moment.
This multisensory experience is elevated by a selection of carefully chosen Kobe sake, perfectly paired with the dishes and an ambient soundscape. From the choice of chopsticks to the Japanese trademarked hospitality—omotenashi— a deep respect for Kobe’s terroir comes together in a wonderful flavor and visual adventure.
