Kansai-style okonomiyaki may have roots in street food, but Chibo, Japan’s first okonomiyaki branch, is proving it has a place among Japan’s five-star hotels, world-class malls and vibrant downtown areas. Its Kitashinchi location, located between Kitashinchi Station and Minami Morimachi Station, is one of Osaka’s key stores that is spreading the idea that the savory cabbage pancake is above subpar flour-based food.
Passing its half-century milestone — its first store opened in Sennichimae in 1973 — Chibo’s menu is nothing short of splendid. The core philosophy of Chibo’s offering is to serve the okonomiyaki that pairs perfectly with the sophistication of teppanyaki and creative cuisine — both of which are also featured at this branch.
For example, the course menu includes Chibo’s signature tonpeiyaki: a fluffy omelet filled with shredded pork, topped with the restaurant’s special brown okonomiyaki sauce and mayo. The lineup also features luxurious ingredients like scallops and Marushin steaks, all prepared on the same piping-hot teppan grill where the okonomiyaki cooks.
But Chibo remains, at its heart, an okonomiyaki restaurant, so every element of the dish is tinkered with. The cabbages are sourced from domestic farms, becoming sweeter when grilled. The batter is an original flour blend using yam as a binder. The secret to its fluffiness lies in incorporating plenty of air through careful whisking, cooking it twice as long as usual, and flipping the pancake four times—nothing more, nothing less.
