This was a fantastic experience! We got an exclusive behind-the-scenes look at one of Tokyo’s best ramen shops—Tsuta, the first ramen shop ever to receive a Michelin star. My experience at Tsuta was exceptional - a fascinating glimpse into the world of Michelin-starred ramen. The exclusive behind-the-scenes tour revealed the meticulous craftsmanship behind Onishi-san's culinary philosophy that earned this establishment its prestigious recognition.
I selected the shio ramen, which proved to be an extraordinary choice. Tasting each component individually highlighted the remarkable complexity in every element. The broth had incredible depth, and when combined with their signature sauces, revealed distinct layers of flavor that evolved beautifully throughout the meal.
Their homemade wheat noodles showcased perfect texture and taste, truly celebrating quality ingredients. Finding Onishi-san's signature at the bottom of my bowl added a personal touch to this culinary journey. I'm already planning to return to try their shoyu ramen next time. This experience demonstrated how traditional Japanese cuisine can evolve while honoring its roots - an impressive balance of innovation and heritage.

The tour provided a unique opportunity to understand, taste, and explore the individual ingredients that make up a Michelin star ramen.
On top of that, participants are encouraged to try their own (mini) version of creating ramen using the individual components provided during the tour.
Then, sitting down at the counter watching the chef and team prepare the award-winning bowl of ramen, is a fascinating experience, building anticipation before being served.
Finally, the bowl is served, along with a side of freshly sliced ham, pickles, and a boiled egg. The combination of ingredients bring out multiple layers of flavor as you make your way through the top to the bottom of the bowl.

Tsuta is one of Japan's leading ramen restaurants. They view ramen not only as a food, but also as a culture.
This experience content allows you to learn and feel the deep ramen culture. You can learn about the store's original noodles made from wheat flour, how the taste of soup stock changes when seafood soup stock (sea) and mushroom soup stock (mountain) are mixed, and how the taste of Japanese soup stock can be absorbed. This experience is also a great way to absorb the Japanese dashi broth culture.
The final touch is the opportunity to eat the ramen of Tsuta. You can watch over the counter as the ramen is elegantly prepared in front of your eyes, and you can feel the soul of each bowl of ramen.
Why did he open a ramen restaurant? You can also learn about the ramen chef's own story and way of life as a human being.
