Imagine stepping behind the counter of a sushi restaurant in Tokyo to learn professional sushi-making techniques used by real chefs. Enter the tantalizing sushi world of Jukusei Sushi Wagokoro, an upscale sushi restaurant only five minutes from Shibuya Station, where Head Chef Katsuro, an expert in the art of nigiri sushi, leads this sushi-making class. Drawing from his more than 20 years of experience in luxury hotels and Michelin-starred restaurants across Japan, from Hokkaido to Kagoshima, the chef, specialized in aging fish techniques and Edomae sushi, shares his unique understanding and vast expertise in this intimate lesson.
After introducing himself, the chef will begin by sharing the day’s menu, consisting of only the freshest and highest-quality seasonal ingredients. He will then take great care sharing the ancient techniques used to make the finest sushi and demonstrate, for instance, how the way of cutting raw fish can drastically affect the texture and mouthfeel, and guide you in slicing fish using Japanese knives. You’ll also learn about aging techniques for fish, sushi eating etiquette and fascinating insights on Japanese cuisine.
You’ll prepare 15 pieces of sushi, including nigiri and temaki (hand rolls) and complete your meal with ten more dishes, including sides. You’ll then enjoy this sushi feast with a delectable tasting featuring ten different types of sake in the elegant interiors of Wagokoro.
