Known for its pungent smell and slimy texture, natto is packed with nutrients, calcium and vitamins that make it a great addition to any diet. If you’re one of those who can’t get enough of this Japanese superfood, then you’ll love this natto workshop!
In this natto-making experience and cooking class in Tokyo, you’ll visit a local shop that does everything by hand. You’ll learn how to make the fermented soybeans with guidance from a professional before preparing two simple recipes that bring out the umami flavors of natto.
Begin by learning about natto and its many health benefits before diving in and making some yourself. Steam the soybeans and discover the secrets of folding the kyogi (a paper-thin sheet of wood that houses the soybeans during fermentation.) Then, stuff your steamed soybeans inside the triangular kyogi before placing them in the shop’s fermentation room.
Next, you’ll learn how to cook with natto. You’ll make two simple recipes, a natto salad with cabbage and a natto prosciutto plate, both designed to bring out the natural umami flavors of the fermented soybeans. While savoring your handmade dishes, enjoy chatting with your host as you gain valuable insights into cooking with natto and how best to enjoy its flavors.
At the end of the experience, you’ll receive the recipes and some of the shop’s natto to take home. Please note that the fermentation process of natto won’t be finished on the same day, so the natto you will get to take home will be pre-made.
