Experience Details

Walk through the beautiful city of Matsumoto, famous for its original castle that towers over the downtown area. Among the old buildings of the city is a miso factory that’s been in operation since 1868.


Tour through the miso factory that includes miso in every stage of the fermentation process. Soybeans, koji and salt are mixed and aged in cedar barrels. The miso here ages for three years, so you can see the difference between the newly made and aged miso. Your guide will explain the process of fermentation, and how the factory creates smooth and creamy high-quality miso.


After the tour, enjoy a meal featuring the miso from the factory! Dishes featuring the different miso the factory produces highlight and complement the quality of the local ingredients. Of course, no miso meal would be complete without miso soup! This healthy dose of fermented soybeans is not only delicious, but also packed with amino acids that are good for your health.
