Let matcha expert Koyama Kazuhiro guide you through modern matcha culture at his cozy cafe in Tokyo. Here, you’ll taste various matcha drinks and discover insights on the art of matcha latte, from what types of milk to use to tea ceremony practices you can adopt for the perfect brew.
Koyama-san’s dedication to matcha extends beyond preparing delicious drinks. He also teaches about Japanese tea at vocational schools and even develops his own innovative tea products and matcha latte bases, as well as organizing the Japan Matcha Latte Art Competition. He curated this experience for anyone, regardless of prior knowledge and background, to learn the intricacies of matcha and how to best enjoy it.
Begin your exploration by learning about matcha’s origins, preparation methods, the differences in matcha grades, and the nuances found in matcha leaves (tencha.)
You’ll then try a selection of straight matcha, including “usucha,” a light-bodied variety, and “koicha,” a more intense kind usually dubbed “matcha espresso.” Discover if you prefer a light matcha, or crave the rich flavors of a thicker and heavier type.
Next, you’ll watch as your host crafts a creamy, hot matcha latte in front of your eyes, finishing it off with stunning latte art. You might not want to take a sip, lest you break the beautiful design. But your host won’t be the only one crafting delicious drinks — you’ll also learn to make a refreshing cold matcha latte under his guidance! Sift the matcha powder, pour just the right amount of hot water and whisk it together before adding milk to complete your drink.
With the deep smell of freshly whisked matcha still in the air, you’ll enjoy your creation with a matcha dessert, a delightfully sweet treat to end your journey. Your host will answer any questions, and you’ll finish the experience with a newfound appreciation of matcha and the knowledge to make a delicious cup at home.
