Chef Takahashi prizes game fowl for its elasticity and flavor, making it the undisputable star of his omakase courses. To that end, he sources chicken and game fowl raised on a special diet without antibiotics from Kanagawa Prefecture and his dedication and mastery of yakitori earned him a Michelin star.
Yakitori Takahashi’s fare is simple yet lively with flavors. Meat is seasoned with salt, chicken fat and vinegar to accentuate its natural flavors. The chef’s attention to detail and quality extends to his non-meat dishes: grilled ginkgo nuts and eggplants, finely grated daikon, potato salad and thick fried tofu, all pleasing different senses for an invigorating meal.
Yakitori Takahashi’s subdued atmosphere allows diners to relax and savor each dish, solo or with a friend or two. A ten-seat counter provides unobstructed views of the chef at work.
