Even for those who might not know the name, they have probably seen this iconic sequence on social media before: A perfect square of minced, raw wagyu beef yukhoe-style, topped with a carefully placed layer of onion and egg yolk, then in turn topped with a smoke-filled bubble from a special bubble gun. The bubble then pops, spilling aromatic smoke all over the yukhoe.


This is the “instant-smoked yukhoe” from Yakiniku Inoue Ginza, a restaurant that went viral on TikTok and Instagram shortly after opening in 2023, thanks to its playfully inventive dishes, the most famous of which is the aforementioned yukhoe. Seeking continuous evolution every day, Inoue sees itself as a “scientific reaction” between two chefs, one of whom headed the kitchen of a Tokyo hotel, and the other who has been in the yakiniku business for more than 20 years.


Many hotel and restaurant veterans have also been enlisted to develop the restaurant’s menu, going beyond the usual offerings that yakiniku restaurants offer. Together, they aim to push the envelope of what yakiniku is and can be, offering increasingly esoteric menu offerings like foie gras pudding among others.


Interestingly for a yakiniku restaurant, where grilling is the focus of the menu, many of Yakiniku Inoue’s signature dishes are raw (again, like the aforementioned yukhoe). This is because the restaurant handles and prepares only raw meat that is certified safe according to the lofty standards of the Ministry of Health, Labor and Welfare, letting guests experience wagyu at its most unadulterated.


This wagyu excellence is supplemented by fine seafood from all over Japan, including oysters, sea urchin and seaweed from Hirota Bay in Rikuzentakata, Iwate Prefecture, as well as off the coast of Kesennuma in Miyagi Prefecture. Rice, meanwhile, is Niigata Prefecture’s finest, taken from the fertile fields of Uonuma. In this way, the chefs conduct a culinary tour of the whole country, taking guests from the northern forests of Hokkaido to Kyushu’s southern shores without once leaving the country.


Above all, Yakiniku Inoue is a place for celebration. The atmosphere instantly puts one at ease, with warm lighting and rustic decor that makes heavy use of brick and wood, putting it instantly in contrast to the glass and steel outside of Ginza. Just east of Ginza-itchome Station, and on the street adjacent to the famed stationery store Ginza Itoya, its facade is warm and inviting, especially on chilly winter nights. Take a seat in the open area to drink in the atmosphere — and some wines from the walk-in cellar — or choose a private room for a more exclusive experience.
