This is Osaka’s flagship sushi restaurant on the global culinary scene, with 2 Michelin stars. The captain at its helm is Chef Ishikawa, a true artisan craftsman. His reputation makes it incredibly difficult to secure a reservation at Sushi Harasho, but once you manage it, you’re in for a treat.
The fare on offer here is Edomae sushi (Tokyo style), stripped back to basics. The clean and clear flavors of the ocean aren’t lost in any overpowering condiments, just presented in their purest form. Their service philosophy also eschews any necessary decorations, with glass plates keeping your attention focussed on the top-grade fish, and the fish alone.
Expert knife work from Ishikawa-san turns each piece into a miniature work of art, with the fish slit and fanned into beautiful patterns which also maximize the contact area with the palate for a full hit of flavor. Several varieties are aged according to the traditions of Edomae, including the tuna, which is marinated whole before being cut and served.
