The restaurant takes its ingredients very seriously, a philosophy that runs through all of its signature courses from the very first bite. Because Akazu doesn’t believe in saving the best for last, the first piece of sushi is always a rich, fatty piece of chutoro (medium-fatty tuna) served over the restaurant’s signature red-vinegared shari rice.
Another favorite is the abalone in liver sauce; compared to the internationally-recognized chutoro, the abalone nigiri represents the beloved flavors of a more provincial Japan.
