Having undergone a full renovation at the end of 2019, there’s never been a better time to visit this Michelin-starred restaurant in Matsuyama City. Here, you can enjoy fine traditional Japanese dining using seasonal ingredients. The exact dishes on the menu vary throughout the year, as traditional washoku (Japanese cuisine) is founded heavily on the changing of the seasons.
The bench-style counter seating looks onto the action of the kitchen, stacked with dishes, with pots and pans hanging from the walls. There you’ll watch the chefs whip up dish after dish of seafood, meat, and vegetables, prepared in a range of authentic Japanese cooking styles.
