Few soba joints stand out in Osaka — and even fewer do it with as much unwavering reliability as Shitennoji Hayauchi, which remains a native plug in the Tennoji’s now urban scene.
There’s a lot to unpack here — weathered rustic facade, Oribe stoneware, traditional paintings and crockery molded by local artisans — but the focus is (rightfully) on the broth and the buckwheat noodles. The owner makes personal visits to Fukui, Nagano and Toyama Prefectures to get the buckwheat seeds, which are grounded to different roughness, kneaded into a dough and cut to the same thickness. The finely ground hosobiki boasts a delicate texture, highlighting the natural sweetness of buckwheat, while the coarser arabiki incorporates buckwheat husks ground on millstones for a subtle rusticity.
The dashi, a bloodline of Osaka cuisine, picks up its flavor from Rishiri kelp and branches to the store’s signature cold dipping broth and warm soup made from horse mackerel, amberjack and skipjack tuna. It’s all in the nitty-gritty: even soy sauce is tailored to the Kansai palate.
There are other dishes on offer: homemade fish cakes, braised beef sinew and konjac, grilled miso or buckwheat chips. But if you manage to divert from soba, get the futomaki — thick sushi rolls. Just watch out for the queue during lunchtime, which starts before Shitennoji Hayauchi opens.
