Although this restaurant in Imabari City serves the full range of Japanese kaiseki cuisine, the sashimi is so good you might mistake it for a restaurant specializing in sushi. In fact, the owner learned to perfectly age fish when working at a sushi restaurant, which is why his raw fish is of such high quality.
The meal doesn’t stop there, however. On the shelf separating the counter from the kitchen, you’ll see containers of all of the fresh, seasonal vegetables which will be served up throughout the evening — as beautiful as any floral display.
These are cooked alongside seasonal seafood and meats for a set-course meal which will give you an insight into the produce and foods of Ehime Prefecture. Counter seats are the standard, although a single private room is available for special occasions.
