In the heart of Sapporo's vibrant Susukino district lies the tranquil Nakajima Park, where the gentle flow of the river soothes the soul and the changing seasons bring a sense of peace. By the park is the elegant Saryo Takinoya, a direct-operated restaurant of the century-old Takinoya ryokan. Here, diners can enjoy stunning views of the serene garden from their table.
It’s clear that Saryo Takinoya was destined for greatness when it recruited Chef Niidate Takuro, who joined in 2007 and became head chef in 2017. Under his leadership, the restaurant earned a Michelin star.
While the focus is on local Hokkaido ingredients, Saryo Takinoya also sources rare fish from outside the region. One standout dish is the signature roughscale sole, simmered in glutinous “domyoji” flour and garnished with delicate light-pink lily roots to evoke the image of a blooming petal. The fish is served in a dashi stock crafted from eight different types of bonito flakes. Diners can also indulge in fresh dishes such as puffer fish with grated daikon radish and ponzu sauce, yellowtail soup with koji, and sashimi featuring tuna, peony shrimp (also known as “botan ebi”), and golden-eyed snapper.
