Led by the talented Nishizuka Yutaka and his son, the restaurant is a little off the beaten path but worth the pilgrimage. Renowned for meticulous attention to detail and artistry, Nishizuka showcases the finest seasonal ingredients through beautifully presented dishes. In summer, the restaurant smokes its oysters and enjoys the bounty of eels, while winter brings the daring fugu (pufferfish) to the menu.
The meal is, of course, designed around its compatibility with Hokkaido’s finest wine, sake, beer and shochu from across Japan. Its commitment to excellence, despite its two-manned show, has earned well-deserved recognition from the prestigious Japanese Culinary Art Competition in 2012 and a Michelin Bib Gourmand award in 2017.
