Primo Passo — "first step" in Italian — invites diners to experience the fusion of Japanese ingredients with the rich sensibilities of Italian cuisine. Upon his return to Japan after working at the Michelin-starred Quattro Passi in Naples, the chef sought to incorporate the natural bounty of Japan with classic Italian cuisine without sacrificing flavor.
The main omakase course is a rich 12-course affair, with five dishes featuring different pasta as the foundation. Diners can delight in pasta concoctions like tonnarelli with matsutake mushrooms and green yuzu. A standard menu item includes chilled capellini with kombu and clam dashi. Primo Passo's wine list is more impressive than the pasta, featuring over 200 varieties, with sake and ume liqueur also on offer.
Primo Passo occupies a quaint basement location within easy walking distance of Shintomicho Station near Ginza and Tsukiji. The formal coffered wood ceiling adds a delicate Japanese touch to the ambiance. Diners can savor the chef's magic at the eight-seat counter before an open kitchen or in a private room seating up to six guests, ideal for wining and dining with coworkers or business partners.
