Slip through the narrow, stone-paved pathway off Oimatsu-dori where cars can’t pass and search for the lit sign that reads “Oryori Amenimomakezu.” Literature fans will find it easy to remember, as it’s named after Kenji Miyazawa’s 19th-century poem, “Be Not Defeated by the Rain.” And undefeated it is, despite its secretive disposition and humble exterior. The owner-chef designed his small restaurant around three things: sake, people, and Osaka cuisine. It’s no wonder, then, that patrons brush elbows in the six-seat, counter-only space, sipping sake and chatting with the jovial host. The chef showcases his expertise with hyperlocal, hyper-seasonal ingredients: Chawanmushi (steamed egg custard) is elevated with chrysanthemum sauce, carrying the gentle aroma of dashi; grilled fish is marinated with malted rice or brushed with miso paste; and pot-cooked rice is tossed with wild vegetables. The breathtaking brilliance of traditional Japanese cuisine shines even more under the warm hospitality of the chef.
